1. Combine water, sugar, cranberries and Poppy’s giardiniera in a small saucepan and cook over medium heat for about 10–12 minutes, until the mixture is bubbly and the cranberries have started to break down.
2. Reduce heat to low and simmer for 15 minutes.
3. Spread goat cheese in a small oven-proof dish and top with cranberry mixture.
4. Bake at 375 degrees for 10-12 minutes until the edges are bubbling.
5. Serve with crackers, bread or dippers of your choice.
