Tangy Italian Tuna Melt

This tangy Italian tuna melt recipe will help you bring the the comforting, nostalgic flavors of this classic diner offering into your kitchen with ease. If you ever get into a routine of having the same ol' lunches day in and day out, this warm, melty and flavor-packed sandwich represents a terrific way to infuse your lunch rotation with something fresh. Adding some hot giardiniera heightened the overall flavor profile of this tuna melt in a highly satisfying way. This recipe is not to be missed!

Ingredients

  • 10 oz tuna (your choice, drained)
  • ¼ red onion, finely diced
  • ½ celery stalk, finely diced
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning 
  • ¼ cup Poppy’s hot Giardinera (with oil), chopped
  • 1 tbsp sweet pickle relish 
  • 5 tbsp good quality mayonnaise
  • Sliced provolone cheese
  • 4 slices sourdough or bread of your choice
  • Softened butter
  • Salt and pepper to taste

Directions

1. In a medium bowl mix tuna, onion, celery, garlic, Italian seasoning, giardiniera, relish, mayonnaise, salt and pepper with a fork until tuna is broken up and the mixture is well combined.

2. Butter both sides of all the bread slices, then place half of the tuna mixture on one slice of bread and top with sliced provolone (or a different cheese of your choice) and the other slice of buttered bread.

3. Cook over medium heat in a nonstick skillet for 3 minutes per side, or until the bread is golden brown and cheese is melted. 

4. Repeat this process using the remaining half of the tuna mixture for your second sandwich.
