Sour Cherry Cheesecake Brownies

This combination of decadent dark chocolate brownies with tart cherry cheesecake results in something even more delightful than the sum of its parts.

Ingredients

Cheesecake Filling:

  • 8oz package cream cheese, softened
  • ¼ cup sugar
  • 1 egg
  • ¼ tsp vanilla
  • ½ cup sour cherry preserves

Brownies:

  • ½ cup butter
  • 1 cup sugar
  • ½ cup cocoa powder
  • 2 eggs
  • ¾ cup all purpose flour
  • ½ tsp salt
  • ½ cup dark chocolate chunks 
  1. Preheat oven to 350 degrees.
  2. Line an 8x8 square baking dish with parchment paper or spray with cooking spray.
  3. Make the cheesecake filling: beat cream cheese and sugar until smooth, add egg and vanilla and beat until just blended. Set this filling aside.
  4. Make the brownie batter: melt butter in a large glass bowl in the microwave, then slowly whisk in the sugar and cocoa powder until combined.
  5. Add vanilla and eggs and whisk until smooth and lump-free.
  6. Add flour, salt and chocolate chunks. Gently stir to combine.

7. Pour the brownie batter into the prepared baking dish in an even layer. Pour the cheesecake mixture over the batter and use an offset spatula to evenly smooth out.

8. Heat the cherry preserves in the microwave for 30 seconds to soften, then give them a stir.
9. Dollop spoonfuls of the cherry preserves all over the batter, then swirl using a knife or skewer.

10. Bake at 350 degrees for 30-40 minutes or until the brownies are set.
11. Let cool, cut into squares and serve.
