Spicy Italian Meatloaf

Meatloaf is a classic dish for a reason, providing that nostalgic feeling associated with a comforting home-cooked meal. We wanted to build upon that foundation by amplifying these flavors with the addition of some hot giardiniera. The end result was heavenly, retaining the iconic flavors we associate with a hearty meatloaf but with some great zestiness baked in. Plus, assembling this meatloaf requires hardly any prep time to get it in the oven. Give it a shot! Recipe below.

Ingredients

  • 1 lb lean ground beef
  • ½ cup Italian seasoned bread crumbs
  • ¼ cup grated parmesan cheese
  • 1 egg
  • 8 oz tomato sauce; split into two equal portions
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp seasoned salt
  • ½ c giardiniera

Directions

1. Preheat oven to 375 degrees.

2. Combine all ingredients in bowl, reserving 4 oz of tomato sauce sauce.

3. Place the combined ingredients onto a prepared sheet pan, and form into a loaf.

4. Spread the reserved sauce evenly over the top of the loaf.

5. Bake for 40-50 minutes.
