Zesty Italian Morning Hash

Breakfast hash is one of the most effective dishes to please a brunch crowd. This zesty hash doesn't require very many ingredients, but it's packed with flavor and with a nice range of textures. Giardiniera adds some nice color and plenty of zing. Plus, you'll have some flexibility to work on your other brunch items as this comes together. Here's how to make it!

Ingredients

  • 1 small green pepper, diced
  • 1 small red pepper, diced
  • 1 small onion, diced
  • Roughly 1.5 lbs of baby Yukon potatoes, quartered (Roast potatoes in air fryer at 350 degrees with olive oil, salt, and pepper for about 15 minutes ahead of time)
  • 1/2 cup hot giardiniera (could also use mild if less heat is preferred)
  • 1 lb mild breakfast sausage
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 3 eggs, fried

Directions

1. Melt butter in a non-stick pan and add sausage. Break up the sausage into smaller chunks. 

2. After about 5 minutes, add the red and green peppers, onion and giardiniera.

3. When sausage is browned and cooked through and veggies are tender, add garlic powder, salt and pepper. Stir to combine everything

4. When ready, add the potatoes to the pan with your sausage and veggies and give everything a good stir.

5. Serve with the fried eggs on top.
